Easy (quick) meals for midlife women
It’s blooming complicated.. Opening the fridge night (or even) day after day ‘what can I eat tonight?’
Then there’s.. Have I got protein? Am I skipping carbs? I can’t eat that I’m on a diet.
Adulting sucks at time.
We live in this world thinking we must eat something different every night, but why? Why not save some of that decision fatigue we live with and have ourselves some go to meals, and save our energy for something else.
My Everyday Method is simple.. We build a menu.
Because deep down, you know you eat the same things week in and week out, so why are you trying to overhaul your whole life as soon as you go ‘on a diet’. Why not find a way to do this for everyday life?
It’s exactly how I live!
Plan yourself… 1-2 breakfast go to options. 2-4 lunches and 4-7 dinner ideas. Thats not saying thats it, thats saying, these are your backups when you don’t know what to cook.
Breakfast
I make this as easy as possible.. 0% Greek yoghurt, berries, homemade granola, drizzle of maple syrup.
To mix this up, change the fruit or try an overnight oats. These are both quick and easy options, can even be put together the night before to take to the office. It literally takes 3 minutes to prep. Done.

Lunch
I have a few go to options for lunch. I’m lucky and work from home so it makes life a little easier, but I will always go for leftovers or these my staples.
Omelettes are great and versatile. I usually love cheese and left over roasted veggies.
Open bagels are a weekly staple. These can be put into all sorts of variations to mix things up as the week goes. Tuna. Chicken. Eggs (anything you can think of).
Eggs on toast, always a quick win! I always have a loaf of sourdough in the house, and sometimes swap butter for harissa paste and sprinkle some feta on to change them up a bit (and make it a little more filling for the afternoon).
Leftovers, always. I always cook extra roasted veggies and sweet potato to last a few days for some leftovers. This is a great quick easy lunch to heat up in the office. Again any toppings can go with this. Sometimes it’s chicken. Poached eggs. A combo of them both. Add in some chickpeas.
Dinner
This is where you can have a little more flexibility, depending how you’re feeling in the evenings. Sometimes the last thing we want is to think about what to cook at the end of the day. So I have a menu of a few things so I don’t have to think, it then frees me up on the days when I want to cook something different.
I’m a huge hater of food waste so a lot of the time you may think my meals don’t go together, but I’ve got to the point I don’t care. I’d rather eat it than chuck it away. I also hate food shopping so this makes life a little bit easier.
Some quick and easy dinner options:
Stir fry - this should be an absolute staple on any weekly menu. Quick, easy, and zero thinking. Pack it with veggies and you’ve got a great filling meal.
Pizza - because why not. These foods are ok too. I don’t eat the whole thing, and we add in some salad to make a great meal.
You’ll notice that we have chicken, salad and potato style recipes a lot. So easy, no thinking and can be mixed up a lot by changing the potato. Changing the spice on the chicken. Adding in different things into the salad. My partner will have some avocado. But typically, beetroot is with all our meals.
Chicken fajitas - yes you can eat these! With a wrap, salsa and some cheese (believe it or not)
We love baked feta, tomatoes, harissa paste and pasta served with chicken and salad. Again don’t be scared to eat these meals, just be mindful of those portion sizes.
Pasta and pesto with chicken and roasted veg and some cheese. Perfect!
And lastly roasted veg with koftas, whipped feta and flat breads.
And don’t forget beans on toast is a perfectly acceptable meal!!
The biggest thing I think you’ll notice is whether thats at home, away in the van or a Saturday night, we don’t tend to eat differently. We don’t live in that mindset of it’s Saturday or we’re on holiday we must eat differently.
Your Tuesday and your Saturday shouldn't be fighting each other.
